Introducing: Elimination Diet Plans

Hello! Welcome to Beyond Soy!

A few years ago, when the new year was starting, Ashley and I decided to try an elimination diet. She hadn’t been feeling well for years and we wondered if changing our food would help, even just a little bit. We wanted even the slightest bit of improvement—any change would be better. Starting on January 1st, we ate a very strict diet for two weeks. We cut out any food that we thought could be a problem (wheat, soy, rice, beans, alcohol, corn). By the end of the two weeks, Ashley felt great! We didn’t notice any specific change, but gradually she started feeling better and better. After two weeks of eating plain meat, fruits, vegetables, and nuts we started adding these foods back in, one at a time, to see how Ashley felt. When we added soy she felt bad again; we had discovered her soy intolerance.

We started on this journey though an elimination diet. Several years ago, Ashley and I made a decision that we didn’t realize the implications of: we were hoping for any sort of small change to make things better and instead we found a huge improvement and a new way of approaching food that we never would have thought possible. Last year we started blogging here at Beyond Soy to be a resource for people learning about food intolerances, allergies, and sensitivities. By sharing our experiences and knowledge, we hope to improve the lives of others.

As a part of helping to improve the lives of others with food intolerances, allergies, and sensitivities, we want to enable others to easily make the same decision that we did. We want to make it easy to try an elimination diet to see if a slight change to your diet could improve the way you feel.
