Soy-Free Pecan Pie Squares Recipe

A huge part of our holiday season is Christmas cookies. We bake together over several days and then love giving cookies to friends and family to help the season feel festive! Our staples are Christmas sugar cookies and gingerbread cookies, but we also make other varieties. If you like pecan pie, you’ll love these pecan pie squares!
What You’ll Need
- 3 cups flour
- 6 tbsp. + 1.5 cups sugar
- 3/4 cup butter, softened
- Salt
- Nonstick spray
- 4 eggs
- 1.5 cup corn syrup
- 3 tbsp. butter, melted
- 1.5 tsp. vanilla
- 2.5 cups chopped pecans
What To Do
- Preheat oven to 350 F.
- Mix flour, 6 tbsp. sugar, softened butter, and salt until crumbly.
- Grease a 9x13 pan with non-stick spray then press crumb mixture to make crust.
- Bake crust for 20 minutes, until golden brown.
- In a separate bowl, mix the eggs, 1.5 cups sugar, corn syrup, melted butter, and vanilla.
- Stir in pecans and then pour the mixture over the baked crust.
- Bake 25 minutes, until set.
- Cool, then cut into squares.
