Soy-Free Nutmeg Log Christmas Cookies

December is a time for treats! Cookies are big in our house and these nutmeg logs are some of our favorites. We only make them this time of year and as a result they really add to the holiday cheer. These cookies are simple to make and pair perfectly with a good book and a cup of hot chocolate or mulled cider. Enjoy!

What You’ll Need:

  • 1 cup + 1/4 cup butter, softened

  • 3/4 cup sugar

  • 1 egg

  • 2 teaspoons + 2 teaspoons rum extract

  • 2-1/2 cups all-purpose flour

  • 1-1/4 teaspoons + a pinch of ground nutmeg

  • Pinch of salt

  • 3 cups confectioners' sugar

  • 2-3 tablespoons almond milk

What To Do:

  1. Preheat oven to 350 F.

  2. In a large bowl, cream 1 cup of butter with 3/4 cup sugar.

  3. Mix in the egg and 2 tsp. rum extract.

  4. Slowly add flour, nutmeg, and salt until well mixed.

  5. Roll dough into 3/4-inch thick rolls, and cut into 2-3-inch lengths.

  6. Place dough logs on an ungreased cookie sheet and flatten slightly.

  7. Bake for 15 minutes, until lightly golden brown, then remove and cool on wire racks.

  8. To make frosting, beat 1/4 cup butter until fluffy.

  9. Slowly add 2 tsp. rum extract, confectioners’ sugar, and almond milk until frosting has a thick consistency.

  10. When cool, frost each dough log and dust with nutmeg.
