Ginger Vegetable Skillet

This vegetable ginger skillet is a perfect meal to cap off a busy day. It's quick to make, uses fresh ingredients, and always tastes great. Enjoy!

What You'll Need:

  • Assorted Vegetables
    • 2 heads broccoli
    • 2-3 peppers (red, orange, yellow for color)
    • Handful of snow peas or sugar snap peas
    • Handful of green beans
  • 1 tbsp corn starch
  • 2 tbsp + 2 tbsp canola oil
  • 1 tsp garlic powder
  • 1 tsp powdered ginger
  • 2 tbsp coconut aminos
  • 2 tbsp water

What to do:

  1. Chop all vegetables and place in a large bowl
  2. In a separate bowl, mix corn starch, 2 tbsp oil, garlic powder, and ginger
  3. Pour the mixture over the vegetables, stirring until evenly coated
  4. In a large pan, heat 2 tbsp oil over medium heat
  5. When the oil is hot, add the vegetables to the pan
  6. Fry for 2-3 minutes, then add coconut aminos and water
  7. Cook for 15 additional minutes, until the vegetables are tender
