When we are dreaming of summer these soy-free chicken kabobs are the perfect meal. With few ingredients and a short prep time you’ll be thinking of summer evenings in no time. Enjoy on the skewer or over rice!
What You’ll Need:
1 lb. chicken breast
1 can (8 oz.) pineapple chunks
1 bell pepper
3 tbsp. coconut aminos
¼ tsp. ground ginger
¼ tsp. garlic powder
1 tbsp. honey
What To Do:
Soak bamboo skewers in water for 30 minutes.
Cut chicken into 1-inch chunks.
Combine coconut aminos, ginger, garlic, and honey to make marinade.
Add chicken and marinade to plastic bag; shake gently to mix, then refrigerate for 30 minutes.
Thread chicken, pineapple chunks, and bell pepper pieces onto bamboo skewers.
Grill over medium heat, 4-5 minutes per side, until chicken is no longer pink in the center.
