Simple Soy-Free Waffles

When Ashley and I were in Belgium a few years ago we absolutely fell in love with the waffles. So much so, in fact, that we came home with a goal to recreate the same light, fluffy waffles that we ate in Belgium.
When we made waffles before, we always used a boxed mix. Boxes of pancake or waffle mix don't usually contain soy, but we find that making the batter from scratch makes for a slightly better waffle (and it isn't that much harder than using a mix). The recipe below is super easy to make, and always has great results--happy eating!
Ingredients:
- 2 eggs
- 2 cups flour
- 1 3/4 cups milk
- 1/2 cup canola oil
- 1 tbsp sugar
- 4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp vanilla
- Non-stick spray
What to do:
- Preheat waffle iron
- Mix all ingredients, removing most of the lumps
- Spray waffle iron with non-stick spray before each waffle
- Pour ~1/3 cup of mix onto the waffle iron
- Heat until golden brown
