Soy-Free Apple Pie

In preparation for the 4th of July next week, here is a recipe for a great all-American (and soy-free) dessert: apple pie!
Crust Ingredients (makes one top and one bottom crust)
- 2 cups flour
- 2/3 cup shortening (don't use crisco: it contains soy! We use this palm oil shortening, or find a butter-based crust recipe)
- A pinch of salt
- Water - ice cold (add until clumpy)
Filling Ingredients
- 6 Granny Smith apples for 8" pan (8 for a 9" pan)
- 1/2 cup sugar
- 3 tablespoons flour
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1 tbsp butter (cold)
Instructions
- Preheat oven to 425 F
- To make the bottom crust, mix 1 cup flour, 1/3 cup shortening, and salt by hand until crumbly
- Add water in small amounts until the dough is clumpy
- Cut apples into slices and mix with sugar, flour, nutmeg, and cinnamon
- Roll out the bottom crust on a floured surface and lift into the pie dish
- Fill dish with the apple mixture
- Make the top crust by mixing 1 cup flour, 1/3 cup shortening, and salt by hand until crumbly
- Add water in small amounts until the dough is clumpy
- Roll out the top crust, and cut into strips ~1" wide
- Layer the strips on top of the apples in a lattice
- Place strips of butter In the open areas of the lattice
- Bake 15 minutes at 425, then lower to 375 for 25-35 minutes until apples are cooked and crust is just browned
- Slice and serve!
